This is the best American classic cookbook ever
This is the best American classic cookbook ever! I love the experimental approach they document for each and every recipe. I've made about 10 things out of this book so far and every one has been fantastic! I made a roast turkey for Thanksgiving just as they described, brined and stuffed, and it was the best turkey I've ever made. This is my number one recipe book now!

great all-around cookbook
This couldn't be your only cookbook, but almost. It covers many of the recipes that you use on a regular basis, and tells you how to make them great, and WHY you need to do what it says. The books Cook's puts out would be wonderful for a beginner cook - you might as well start out doing it the right way. I only wish they had been around when I was a kid. And if you haven't yet, you should catch their tv show on PBS.

I always wanted to try to make Fried Chicken with 2 Quarts of Buttermilk needed for the Chicken Brine, to find out there's was a lot of work involved and my Family and I didn't care for the "Crispy Fried Chicken" I made "Coconut Cream Pie" which is one of my Favorites, I made it many times before since the Recipe its also in The America's Test Kitchen Family Baking Book and also in The complete America's Test Kitchen TV Show Cookbook of the ones We HaveThere are many Interesting Recipes, Southern Classics "Fried Green Tomatoes" is one of them and I wanted to make it, I used any Firm, under Ripe Tomato as suggested in the Recipe and I own the Well-Seasoned Cast-Iron Skillet so I started to fry the Tomato Slices and they were very Good, Crispy due to the Fine-textured Cornmeal, not a single Fried Tomato Sliced left. Many New Recipes and some Old Ones with a New Twist in American Classics Cookbook. The Cookbook Paper is very yellow, low quality with that small tiny Print very common in these Books, the Measuring Numbers in the List of Ingredients are Hard to Read. American Classics has a Dish for everyone with Hundreds of Exhaustively Tested Recipes Once Again! ...Thank You D.D.

Very good American Classic cookbook
Bought this as a gift for a friend and he was amazed. He took it back to Italy and he loves the classic recipes. It had everything I grew up on and more! And since I'm a cook, I read through the recipes and approved! Lots of variety too!

Excellent Cookbook for First Time Cooks
I have tried nearly every recipe in this cookbook. All of them came out well, and the explanations that come with the recipes are excellent.You can find more recipes in the Joy of Cooking, but you won't be as assured the food will taste good. Cooks Illustrated runs through several iterations to create the "perfect" recipe. Most of the ingredients are simple and readily available. The instructions are easy to follow.This is an excellent cookbook for inexperienced and experienced cooks alike.

Love this book
Love this book! Tells you the whys and ways of cooking classic foods. The binding was dry so out it's trying to come loose, but that happens sometimes with old books. Still, glad I bought it. :-)
